Skinny Spinach Lasagna Rolls


One of my favorite recipes is skinny spinach lasagna. My family has always been big lasagna eaters, but had never had spinach lasagna until I stumbled upon Gina's blog, skinnytaste.com. Let me tell you, I was in heaven. I'm a pasta eater. I can eat anyone under the table when it comes to pasta... and cheese. Let's not forget about how yummy cheese is. 

Today, I'm going to give y'all a quick tutorial of sorts that will help guide you through Gina's fabulous recipe. Did I mention she calculates calories, weight watchers points, and a lot of other nutritional facts as well? She is like super woman! I wouldn't even know where to begin when trying to calculate all that info.

Here is my "I'm starving and this is how I have memorized the recipe by heart": 

First, boil the water and cook 10 noodles (Gina's recipe calls for 9 noodles, but I'm weird and have to do an even 10). While the noodles are cooking, I always put my frozen spinach in a bowl in the microwave to cook for 5 minutes. 



After the 5 minutes is up, I squish all the liquid I can out of the cooked spinach and drain off all excess liquid. Cooked spinach always looks pretty nasty to me, but I love adding it to all my pasta dishes. My advice is to not look to closely at it :)

The following are the rest of the ingredients:



Combine the cooked spinach, 1/2 cup of parmesan, and 15 ounces of ricotta in a bowl and stir. Add garlic salt and pepper to taste. Trey and I are like garlic saltaholics so we add a very generous amount. Gina's recipe calls for an egg in this mixture, but we never buy eggs because I don't eat them. Any form of cooked eggs that I can see are still in the form of eggs gives me the heebie jeebies. Pop some eggs in some cookie dough or a cake batter and I'll be right next to you with a spoon in hand ready to taste. 

After mixing those ingredients, pour half a can of pasta sauce into the baking dish. Set aside the other half. 

Next dollop out a few table spoons of the spinach/cheese mixture on to a cooked lasagna noodle. 


Gina's recipe calls for an exact measurement, but lets be honest when Trey and I are "starving" I challenge myself to make the lasagna in under five minutes. Trey was getting a little antsy when I kept stopping the process to take pictures so I knew I needed to book it. Do you think there is a speed lasagna making contest that I could enter? First place is totally mine. 


Okay back to the recipe. After spreading the mixture out on the noodle, roll up the noodle and place it in the baking dish. Repeat 9 more times :) 



After all 10 noodles are rolled up and you have poured the remaining pasta sauce on top, you are ready to shove that baby in the oven! (That did not sound right.) Let me try again, gently place the baking dish in the oven after preheating your oven to 375 degrees. I generally just wait until the sauce around the lasagna rolls is boiling. Then it is ready to be served and devoured.

Speaking of being devoured. There was no time for an after picture, but Gina has a really pretty one on her blog :) 


I hope this becomes a staple in your family's recipe line up! It makes for great left overs and for me to say that is rare. I usually hate left overs, but not a drop of this lasagna goes to waste at my house. Anyone have a favorite recipe that has a healthy spin to it? Please share! 

Work It Out Wednesday


Each Wednesday I'll be sharing a little work out inspiration to keep me motivated and hopefully motivate others who feel like they've hit a rut too. When it comes to working out, I always find an excuse not to do it. So, hopefully these posts on Wednesdays will remind me and keep me accountable when it comes to staying healthy/exercising! 


I've been on a Yoga kick lately so here is a sequence that caught my eye on Pinterest. 


I even made Trey do this morning Yoga sequence with me. I burned some major calories laughing at how inflexible he is! I'm sorry honey :) What is it with guys being so inflexible? Am I the only one noticing this? Do you make your significant others exercise with you? Any couples Yoga or spinning lately? I've always wanted to take a spin class. Does anyone else love the stretched feeling you have after you do Yoga? I swear I'm taller after :)

Frame That Thermo...STAT!

Today, I just wanted to share with you a little quickie project that I did a couple of weekends ago. It literally took me less than five minutes and it makes me very happy on a daily basis!

I saw this idea on none other than Pinterest... I bet y'all haven't heard that one before.

 Right? 





As I am always on a budget, college girl here I try to use things that I already have on hand. So when I spotted this idea on Pinterest, I knew I had something that I could work with. I have always loved very intricate baroque like frames and collect them every chance I get. My favorite places to find them are flea markets, garage sales, estate sales, and Hobby Lobby even carries a very affordable selection with all there 50% off sales and 40% off coupons every week. Anyways, I went through my stash and I found this round baroque-ish frame that had the perfect size of circle. Who says you can't fit a square peg into a round hole? (Was that a TWSS?) 





Once I added the frame, I started staring at my beautifully elegantly simple thermostat and decided that now with the thermostat being all fancy, the rest of the wall looked bare. Really bare. So I'm thinking of adding two other baroque frames to take it to the next level. I'm hung up over the colors though... I just love how the cream looks (major bonus that the frame was already that color), but I'm not sure I want them all to be cream. I'll keep y'all posted and feel free to throw any ideas my way! 





And yes half of my light switch is painted grey. Someone got a little over zealous with the paint roller... I won't name names. Okay, I'm not going to lie. It was me. Whew! I feel much better.

Let There Be Cake


One of my favorite things to do when my family goes to the lake is to head into a town about 20 minutes away from our house and go antiquing. My mom, sister, and I always find little treasures and we always have a blast! Our favorite go-to spot is this huge-ish warehouse of different booths that house tons of this and thats. 

My absolute favorite thing to look for is milk glass. I am a hoarder collector. I might have a problem! My collection comes from a collection of collections. Say that five times fast :)

My Granny and Nanny both gave me pieces that I now have and my mom has contributed to my collection as well. It is like Christmas morning when I find a new piece. Especially this puppy right here... 


I have seen a lot of milk glass in my day, but I have never seen this piece before. I practically tackled my mom trying to get it off the shelf. Sorry Mom :)

While we were there we also picked up a couple of other items. 

This is an antique cake platter that I just had to have even though I never make cake? It was too adorable to pass up! Someday when I have a beautiful white kitchen I'll use it frequently even if I just put the bread under it :) 



Another little find, is this glass holder. It says AVON on the bottom, so I am guessing it was something you could buy out of their catalogue at one time or another. I use it to hold cotton swabs in and they fit perfectly! I always love to take ordinary everyday household items and pretty them up a little. Its the little things right?



These are some drawers that my Mom and I kept spotting throughout the building. It was like a drawer scavenger hunt. I know it is a little weird that my Mom and I bought drawers that weren't a part of a dresser, but they are literally so beautiful that we didn't even care. I kept mine au natural and my mom white washed hers. 



Lastly, this is a little shelf (?) that my Mom bought. I'm not quite sure what it is used for, but the color was really cute and its very swirly! Whatever makes ya happy right?!

These Boots Are Made For Walkin...


...and thats just what they'll do! One of these days these boots are going to walk all over OU! Haha I couldn't resist!

Here they are! They are everything I wanted! Can't wait for it to cool down so I can actually wear them! It is still in the 100's here. Except for today it was a glorious 88 degrees! So here's hoping that this is sign that things are going to start to cool down.



Surprise! I picked up these today on a shopping run to TJMaxx with my Mommy. She thought they were a little out there, but that is why I love them! 





These babies are ready for leggings and cool weather and so am I. Seriously... not to sound repetitive, but it would be nice to walk outside at 9AM and not immediately break a sweat or come down with heat exhaustion! Walking to class has been an absolute nightmare. Thank goodness it's the weekend! I'll give you a sneak peak at what I'll be doing this weekend....


This is just the white primer.

...cannot wait for this bad boy to be done and back in the house. I'm going to let it air out in the backyard for a couple of days and then I'll be back with the big reveal. Stay tuned :)

I'm Bringing School Back... What?

It's that time of year again.... BACK to School!

I'm in college and still get excited for the first day of classes. Is that weird? No. I didn't think so. 

As always I bought some new school supplies from Target! I'm the kind of girl that gets a little over zealous about school supplies like binders, planners, neon post-its, but then I forget the essentials like oh I don't know... paper!


The two binders are from Target, the planner is an Erin Condren planner, and I picked up these fun little Post-It notes at Walgreens!

Yes, I was the one in class writing notes in my planner/on printer paper the first couple days of class.

 Back to school is like New Years for me. I always make resolutions ranging from staying organized to purging my closet of worn out items in order to make room for comfy fall fashions. Can I tell y'all how much I love fall clothes? I love leggings with tunics and boots. It's like my favorite outfit combo of all time! I'm also obsessed with scarves so it's pretty rare to see me awake out of the house without one on. I've been eyeing these pieces from Old Navy, Target, and Forever21.

On the style front, I'm all about buying basics and then layering with jewelry, scarves, and outerwear. Sometimes I like to challenge myself to see how many outfits I can make out of just a couple of basics. Fall clothing is great when it comes to getting a lot out of a couple of items. On a side note I did just purchase the BP boots and I'm super psyched because they get in tomorrow! I'll let y'all know what I think!
